At Karuizawa, this evolution continues. As the only whisky distillery in the town of Karuizawa today, we contribute to the future of Japanese whisky through continuity. Every decision, from the selection of raw ingredients to the climate in which we age our casks, reflects a belief in the value of long-form maturation and place-based craft.

Each step of production at Karuizawa Whisky Distillery is grounded in traditional methods and thoughtful choices. We distill using lantern-shaped pot stills crafted by Forsyths of Scotland, echoing the equipment used by the former Karuizawa Distillery. Maturation takes place exclusively in carefully-selected sherry casks, ensuring depth, richness, and continuity of flavor. Our philosophy resists the shortcuts of modern efficiency. Instead, we focus on developing whisky that expresses patience, purity, and the complexity that defines the best of Japanese whisky traditions.

The Roots of Japanese Whisky Craftsmanship

Honoring a Japanese Whisky Heritage

The story of Karuizawa Whisky Distillery begins with a deep connection to tradition. Founded under the leadership of Shigeru Totsuka, the 16th-generation head of Totsuka Shuzo, an historic sake brewery established in 1653, the distillery seeks to carry forward and reinterpret the spirit of the former Karuizawa Distillery. Production resumed under the guidance of Osami Uchibori, former Malt Master of the previous distillery, whose philosophy continues to influence our approach.

Our Japanese whisky-making is guided by Yoshiyuki Nakazato, the Master Distiller factory manager of the former distillery, whose experience ensures continuity with the past while charting a new course. Drawing from Japan’s broader whisky heritage and the specific legacy of Karuizawa, Nakazato led the first distillation at the end of 2022. This enduring continuity of people, place, and purpose continues to shape the whisky we craft today.

A Decade's Journey to Maturity

Karuizawa Whisky Distillery is the only distillery in the world to commit from the outset to a minimum 10-year maturation before its first official release. This long-form approach is grounded in experience and guided by a consistent philosophy; one that values the gradual unfolding of aroma and character through patient oversight. From the first fill to the final decision to bottle, every cask is shaped by time and tradition.

Our first distillation was completed in late 2022. In keeping with our founding principles, no whisky will be released before 2033. This extended period of maturation allows each spirit to evolve in the cool mountain air of Karuizawa until it reaches a point of natural balance and clarity. The result will not reflect haste, but the steady accumulation of depth earned over a decade.

From the beginning, Karuizawa Whisky Distillery committed to aging all whisky for a minimum of 10 years before its first single malt release. This reflects a long-term approach shaped by patience and respect for the maturation process. Our first distillation was completed at the end of 2022, and our inaugural release is expected in 2033. This timeline is guided by the natural pace of development in Karuizawa’s mountain climate and the belief that readiness cannot be forced.

Our Karuizawa Whisky follows a philosophy that maturity takes time. Every cask is given at least a decade to develop, shaped by the seasonal shifts and cool air of the region. This approach draws from the principles of the late Mr. Uchibori, the Malt Master of the former Karuizawa Whisky, who believed that whisky finds its depth through patience. The result is a spirit defined by balance and detail, nurtured in a setting that supports transformation and long-term vision.

Our first release is anticipated no earlier than 2033. This respects the minimum aging period we have committed to from the start. Each cask matures at its own pace in the mountain climate of Karuizawa. Information on availability will be shared through official channels closer to the release. Until then, our work continues behind the scenes, allowing every cask the time it needs to reach full expression.
